About the Farm

In 2003, I contracted the Alpha-Galactose meat allergy which was caused by hundreds of tick bites I received while mowing the lawn one afternoon. Being someone who loves all kinds of foods, I was devastated to have to give up pork, beef, lamb, and all other mammalian meats. In 2010, I discovered that emu was a perfect replacement for beef. I was amazed that such an animal existed; one that tasted just like beef, but was also safe for my allergy and which happens to be the most healthful meat.

My wife and I (and our four young children) started this farm in 2012 with a mission to share a safe red meat with others who also have this terrible food allergy. Our meats have been featured at a Friends of James Beard Dinner (2013), at an all Australian ingredients Dinner Lab (2014), and at the Wild About Game Dinner at the James Beard House in NYC (2014 & 2015).

About our Emus

Our emus are raised without the use of antibiotics, hormones, or steroids.  We do not use pesticides or herbicides on our farm as we strive to create a natural environment for our animals.  All our animals are free-range. 

In blind taste tests, our emu cannot be differentiated from beef.  Also in blind taste tests with professional chefs, the emu fan filet (the best cut) was preferred over the ostrich fan filet.
