Amaroo Hills Emu Meatloaf

Serves 4

INGREDIENTS:

1 lb Amaroo Hills 100% Ground Emu

1 egg, beaten

1/4 cup dried breadcrumbs (or one slice of soft bread, chopped in the blender)

1/8 cup dairy-free milk (soy, almond, etc)

1/2 medium onion, diced

1/3 to 1/2 medium green bell pepper, diced (or orange bell pepper)

1/4 teaspoon dried sage

1/4 teaspoon dried thyme

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

Sauce

1/2 cup ketchup

1/4 cup brown sugar, packed

DIRECTIONS:

  1. Preheat the oven to 350 degrees Fahrenheit 
  2. Combine and stir the egg, breadcrumbs, milk, onion, bell pepper, and spices in a medium mixing bowl
  3. Add the ground emu and mix well
  4. Pat the mixture into a loaf pan or similar-sized pan and bake for 40 minutes or until the meatloaf is no longer pink
  5. While it is baking, mix the ketchup and the brown sugar in a small bowl
  6. Remove the meatloaf from the oven. Use a teaspoon to remove the liquid gathered at the top. Then spoon the ketchup/brown sugar mixture over the meat.
  7. Return the meatloaf to the oven for 10 minutes.
