Goose is dark meat with a similar flavor to duck. It is succulent, juicy, and produces a good amount of fat when roasted that is great for making roasted potatoes. Our geese are pasture-raised in small numbers on family farms and are never given any antibiotics or hormones. They are processed by hand and air-chilled to maximize flavor.
