The most tender ostrich cut, the Fan Filet is the "Filet Mignon" cut from the ostrich. We trim these ourselves by hand at a USDA facility so that all cuts have grains running vertically to maximize tenderness. Can be grilled to perfection. Great for a gourmet chef!
